What does it mean to have food that's placeless? It means food that carries everything with it. It's food likely found in Spain, speaking English, with a perfume of Yemeni spices and Hungarian chilies. It is wrapped in cabbage leaves from Alsace, and prefers vodka and all manner of red wine.
We apply our culinary training, cultural curiosity, and research skills to show that wandering foods are not lost, and indeed some of the most informative about the passage of time and through place.
